Heirloom Tomato & Avocado
One of my favorite foods is most definitely the tomato. It’s subtle sweetness contrasted by it’s tart side and their stunning hues, especially those of the heirloom variety. Then there is the avocado; gorgeous vibrant green when ripe with a perfectly creamy interior. They make a perfect marriage when avocado takes the lead in Guacamole and a beautiful duet when the tomato stars in this easy vegetarian recipe.
Recipe:
2 Heirloom Tomatoes (preferably the most colorful)
1 avocado, diced
1/2 red onion, thinly sliced
1 tbsp salt packed capers, rinsed
Course sea salt (or Kosher)
Pepper to taste
Handful of cilantro, chopped
1/3 cup, lowfat sour cream
1/3-1/2 cup lowfat or nonfat milk
1 clove garlic, minced
zest of 1 lemon
Cut the tomatoes into about 1/2” thickness. You will need 3 slices per plate.
Mix together the sour cream, milk, cilantro, garlic, and lemon zest in a bowl, season to taste with salt and pepper and set aside.
On your salad plate place 1 slice of tomato, sprinkle with sea salt, some avocado, some onion slices and repeat until you have three layers of tomatoes.
Drizzle your dressing over top, garnish with a few capers and there you have it! Easy yet delicious vegetarian dish!
